Spicy Cajun Chicken

This make a great mid week fast-meal when you serve it up with some bagged salad or slaw mix and microwavable rice, pasta or a steamed potato. Or, if you have some time while cooking the chicken, serve it up with our Corn and Feta Salad - yummo!


  • 500g chicken breast, sliced (or buy chicken breast chunks already chopped for you)

  • 2 Tbs Cajun Spice (hot or normal)

  • 1/2 lemon, juiced and zested


  1. Slice chicken into strips and place into a medium bowl.

  2. Add spice, lemon zest and juice to the bowl.

  3. Toss to coat the chicken well.

  4. Heat a medium/large fry pan on medium-high heat and add 1 tablespoon of extra virgin olive oil.

  5. When hot, add chicken and cook for approximately 4 minutes, turning over and cooking for another 2-4 minutes.

  6. Check to see chicken is cooked by cutting a piece. When cooked, serve with our Corn & Feta Salad or some bagged salad, slaw mix and microwavable rice, pasta or a steamed potato.


Tip: This chicken makes a great meal-prep protein. Cook up and portion into serves, freeze, and defrost when you need for a quick lunch or dinner.

This chicken is also tasty on a wrap or sandwich with salw and cheese.
